Flavours

Fruit, vanilla, mint and bespoke flavour profiles for confectionery, Turkish delight, gum and desserts.

Confectionery and Food Applications · Last updated:

A food flavouring is a preparation added to food to give or enhance its aroma and taste; it is not consumed on its own. Flavours are used especially in confectionery, Turkish delight, chewing gum, jelly sweets, cakes and desserts, and help keep the taste of a product the same in every batch.

Which flavour profiles are available?

  • Fruit flavours: strawberry, orange, lemon, apple, sour cherry, banana, tropical fruits
  • Sweet profiles: vanilla, caramel, chocolate, milk
  • Fresh profiles: mint, menthol, bubble gum
  • Traditional tastes: rose, mastic and combinations typical of Turkish delight

What should you consider when choosing a flavour?

  • Process temperature: heat-stable flavours are preferred for products that are baked or boiled.
  • Medium: water-based and fat-based products need flavours with different solubility.
  • Dosage: the amount depends on the product and target intensity and should be confirmed with a sample.

In Turkey, flavourings used in food are subject to the flavouring regulations of the Turkish Food Codex. We recommend reviewing how the flavouring will appear on your label with your food regulatory adviser.
